  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 1 can (15 oz) refried beans
  • 1 cup salsa (mild or spicy)
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • ½ cup sour cream
  • ¼ cup chopped cilantro

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the ground beef with diced onion and minced garlic until browned, about 5 minutes. Drain excess fat if needed.
  3. Layer tortillas at the bottom of the baking dish. Spread refried beans over them, add half the cooked beef mixture, top with salsa and a sprinkle of cheese.
  4. Repeat layering: tortillas, remaining beans, beef mixture, salsa, and cheese.
  5. Cover with aluminum foil (shiny side down) and bake for 15 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly and golden.
  6. Let cool slightly before slicing. Serve topped with sour cream and chopped cilantro.
