  • 2 tbsp yellow curry powder
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 cup full-fat coconut milk
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp coconut oil (for cooking)

Instructions

  1. Marinate chicken by mixing it with curry powder, garlic, ginger, salt, and black pepper in a bowl. Let sit for at least 30 minutes.
  2. Heat coconut oil in a large skillet over medium heat. Add onions and bell peppers; sauté until soft.
