Ingredients

  • 12 oz Cajun sausage, sliced
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup bell peppers, diced (mixed red and green)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning
  • ½ cup Parmigiano-Reggiano cheese, grated
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and bell peppers for 5-7 minutes until softened.
  2. Add minced garlic and sausage; cook until the sausage is browned (4-5 minutes).
  3. Stir in heavy cream and Cajun seasoning; simmer for about 3-4 minutes until the sauce thickens.
  4. Meanwhile, boil salted water and cook penne pasta according to package instructions until al dente. Reserve some pasta water.
  5. Drain pasta and combine with the creamy mixture, adding reserved water as needed for desired creaminess.
  6. Remove from heat; stir in grated cheese and chopped parsley before serving.
