- 8 oz penne pasta
- 1 cup heavy cream
- 1 cup bell peppers, diced (mixed red and green)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tsp Cajun seasoning
- ½ cup Parmigiano-Reggiano cheese, grated
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onion and bell peppers for 5-7 minutes until softened.
- Add minced garlic and sausage; cook until the sausage is browned (4-5 minutes).
- Stir in heavy cream and Cajun seasoning; simmer for about 3-4 minutes until the sauce thickens.
- Meanwhile, boil salted water and cook penne pasta according to package instructions until al dente. Reserve some pasta water.
- Drain pasta and combine with the creamy mixture, adding reserved water as needed for desired creaminess.
- Remove from heat; stir in grated cheese and chopped parsley before serving.
