  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh broccoli florets
  • 8 oz cream cheese, softened
  • 1 oz ranch seasoning mix
  • 1.5 cups shredded cheddar and mozzarella cheese blend
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Cut broccoli into bite-sized pieces. In a bowl, mix cream cheese, ranch seasoning, garlic powder, and half of the shredded cheese until smooth.
  4. Spread the mixture evenly over the seasoned chicken in the baking dish. Scatter broccoli around and on top of the chicken.
  5. Sprinkle remaining shredded cheese over everything and drizzle with olive oil.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15–20 minutes until chicken reaches an internal temperature of 165°F (75°C) and cheese is bubbly.
  7. Let it rest briefly before garnishing with chopped green onions. Serve hot.
