Description

Cheesy Potato Egg Scramble is a creamy and comforting dish featuring fluffy eggs, crispy potatoes, and melted cheese—perfect for a hearty breakfast or brunch!

Ingredients

Scale
  • 2 cups diced Russet or Yukon Gold potatoes
  • 4 large fresh eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Wash and dice the potatoes into small cubes. Set all ingredients on your countertop.
  2. Heat olive oil or butter in a large skillet over medium heat. Add chopped onions and bell peppers; sauté until softened.
  3. Stir in the diced potatoes; cook until golden brown and tender, about 10-12 minutes.
  4. Whisk the eggs with salt and pepper until frothy; pour over the potato mixture in the skillet.
  5. When eggs begin to set but are still slightly runny, sprinkle cheddar cheese on top. Gently fold until combined and cheese melts.
  6. Serve immediately with toast or fresh herbs if desired.
