Ingredients

  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh lettuce (romaine or butter lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, thinly sliced
  • ½ cup Greek yogurt
  • 2 tbsp mustard
  • 4 whole wheat tortillas
  • 2 tbsp fresh herbs (dill or parsley), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper, then bake for 25-30 minutes until fully cooked.
  2. In a bowl, mix Greek yogurt and mustard until smooth. Add chopped herbs for extra flavor, if desired.
  3. Once the chicken has cooled slightly, chop it into bite-sized pieces. Dice cucumbers and halve cherry tomatoes.
  4. In a large bowl, combine chopped chicken, lettuce, tomatoes, cucumber, herbs, and dressing. Toss gently to coat.
  5. Spoon the mixture onto each tortilla and wrap tightly. Cut diagonally to serve.
