Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp chipotle pepper in adobo sauce, chopped
  • 2 tbsp raw honey
  • 1 tbsp lime juice (freshly squeezed)
  • 1 cup fresh pineapple, diced
  • ¼ cup cilantro, chopped
  • 4 taco shells (corn or flour)
  • ¼ cup red onion, finely chopped
  • ½ tsp garlic powder
  • 1 tbsp olive oil

Instructions

  1. In a bowl, mix chipotle pepper, honey, garlic powder, lime juice, and olive oil until smooth.
  2. Marinate salmon fillets in the mixture for at least 30 minutes.
  3. Heat a skillet over medium-high heat and add olive oil. Sear salmon skin-side down for 4-5 minutes until crispy; flip and cook for an additional minute.
  4. While the salmon cooks, prepare the pineapple salsa by mixing diced pineapple, red onion, cilantro, and lime juice in a bowl.
  5. Warm taco shells and flake the cooked salmon into them. Top with pineapple salsa before serving.
