- 1 tbsp lime juice (freshly squeezed)
- 1 cup fresh pineapple, diced

- 4 taco shells (corn or flour)
- ¼ cup red onion, finely chopped
- ½ tsp garlic powder
- 1 tbsp olive oil
Instructions
- In a bowl, mix chipotle pepper, honey, garlic powder, lime juice, and olive oil until smooth.
- Marinate salmon fillets in the mixture for at least 30 minutes.
- Heat a skillet over medium-high heat and add olive oil. Sear salmon skin-side down for 4-5 minutes until crispy; flip and cook for an additional minute.
- While the salmon cooks, prepare the pineapple salsa by mixing diced pineapple, red onion, cilantro, and lime juice in a bowl.
- Warm taco shells and flake the cooked salmon into them. Top with pineapple salsa before serving.
