- 2 celery stalks, chopped
- 4 cups low-sodium beef broth
- 1 cup red wine (optional)
- 2 sprigs fresh thyme
- 2 bay leaves

Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides (about 5-7 minutes). Remove and set aside.

- Return the seared beef to the pot along with potatoes, thyme, bay leaves, and beef broth. Bring to a boil.
- Reduce heat to low, cover tightly, and simmer for about two hours or until beef is fork-tender.
