  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 medium Yukon Gold potatoes, diced
  • 2 celery stalks, chopped
  • 4 cups low-sodium beef broth
  • 1 cup red wine (optional)
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef in batches until browned on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, sauté onions and garlic for about 5 minutes until softened. Add carrots and celery; cook until tender.
  3. Deglaze the pot with red wine (if using), scraping up brown bits from the bottom for added flavor.
  4. Return the seared beef to the pot along with potatoes, thyme, bay leaves, and beef broth. Bring to a boil.
  5. Reduce heat to low, cover tightly, and simmer for about two hours or until beef is fork-tender.
  6. Remove bay leaves and thyme stems before serving. Enjoy with crusty bread or creamy mashed potatoes.
