  • 6 cups beef broth (low-sodium preferred)
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Prepare your vegetables by chopping onions, carrots, and celery into bite-sized pieces.
  2. In a large pot over medium heat, heat olive oil. Add onions, carrots, and celery; sauté until onions are translucent.
  3. Increase heat to medium-high and add cubed beef. Brown on all sides for depth of flavor.
  4. Stir in minced garlic, thyme, and bay leaves until fragrant.
  5. Pour in beef broth while scraping up any browned bits from the pot. Add rinsed barley and bring to a gentle boil.
