Instructions

  1. In a large pot over medium heat, melt 2 tbsp butter or olive oil. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Add sliced mushrooms and cook until golden brown (around 5 minutes).
  3. Stir in the shredded rotisserie chicken, pour in the chicken broth, and add thyme, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  4. Slowly stir in the heavy cream and let it cook for an additional 5 minutes.
  5. Taste and adjust seasoning if necessary before serving.
