  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium zucchinis, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small eggplant, diced
  • 2 (14.5 oz) cans diced tomatoes (with juices)
  • 4 cups vegetable broth
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  2. Add the diced zucchini, bell peppers, and eggplant. Cook for another 5 minutes until they soften slightly.
  3. Pour in the canned tomatoes with their juices and add enough vegetable broth to cover the veggies. Stir to combine.
  4. Season with salt, pepper, and any additional herbs you prefer (thyme works great). Reduce heat and simmer for about 20 minutes to allow flavors to meld.
  5. Just before serving, stir in the fresh basil leaves. Taste and adjust seasoning as needed.
  6. Ladle into bowls and enjoy with crusty bread or a fresh salad.
