Description

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (mix of red and green)
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Tortilla chips (to taste)
  • 1 avocado, diced

Instructions

  1. Chop the onion, bell peppers, and garlic.
  2. Layer the chicken breasts at the bottom of the crock pot.
  3. Add diced tomatoes, black beans, chopped onion, bell peppers, minced garlic, cumin, chili powder, and pour in chicken broth.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the cooked chicken with two forks and return it to the soup.
  6. Taste and season as needed before serving hot with tortilla chips and avocado.
