  • 1 lb lean ground beef
  • 1 lb Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 14 oz can diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 tsp dried Italian herbs (basil, oregano, thyme)
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a skillet over medium heat, brown the ground beef and Italian sausage until fully cooked; drain excess fat.
  2. Add diced onions to the skillet and sauté until translucent. Stir in minced garlic for the last minute.
  3. Transfer the meat mixture to the crock pot; add crushed tomatoes, diced tomatoes, beef broth, dried herbs, salt, and pepper.
  4. Break lasagna noodles into bite-sized pieces (do not pre-cook) and stir them into the crock pot.
  5. Cover and cook on low for about 6 hours or high for 4 hours.
  6. Stir in ricotta cheese just before serving; ladle into bowls and top with mozzarella.
