- 1 medium onion, diced
- 4 cloves garlic, minced
- 28 oz can crushed tomatoes
- 14 oz can diced tomatoes
- 4 cups low-sodium beef broth
- 2 tsp dried Italian herbs (basil, oregano, thyme)
- 8 oz lasagna noodles, broken into pieces
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
Instructions
- In a skillet over medium heat, brown the ground beef and Italian sausage until fully cooked; drain excess fat.
- Add diced onions to the skillet and sauté until translucent. Stir in minced garlic for the last minute.
- Transfer the meat mixture to the crock pot; add crushed tomatoes, diced tomatoes, beef broth, dried herbs, salt, and pepper.
- Break lasagna noodles into bite-sized pieces (do not pre-cook) and stir them into the crock pot.
- Cover and cook on low for about 6 hours or high for 4 hours.
- Stir in ricotta cheese just before serving; ladle into bowls and top with mozzarella.
