  • 1 cup green lentils, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 3 garlic cloves, minced
  • 1/4 tsp saffron threads, steeped in warm broth
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent (about 5 minutes).
  2. Add diced carrots, minced garlic, cumin, and turmeric; cook for another 3 minutes.
  3. Stir in the rinsed lentils and pour in the vegetable broth.
  4. Gently add steeped saffron threads to the pot.
  5. Bring to a boil, then reduce heat to simmer uncovered for 30-35 minutes until lentils are tender.
  6. Finish by squeezing fresh lemon juice over the stew before serving.
