  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 1 cup carrots, chopped
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste

Instructions

  2. Roll mixture into 1-inch meatballs and set aside.

  4. In the same pot, add beef broth and bring to a simmer. Stir in carrots and cook for 10 minutes until tender.
  5. Reduce heat; stir in heavy cream and return meatballs to the pot along with fresh dill. Simmer for an additional 5 minutes.
