  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tbsp extra virgin olive oil
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 4 tortillas or pita bread
  • 1 cup fresh lettuce, chopped
  • 1 cup tomatoes, diced
  • ¼ cup tahini or yogurt sauce

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, toss rinsed chickpeas with olive oil, cumin, smoked paprika, and garlic powder until evenly coated.
  2. Spread chickpeas on a baking sheet in a single layer and bake for about 20 minutes until crispy.
  3. While chickpeas bake, warm tortillas or pita bread in a skillet over medium heat until pliable.
  4. Lay out warm tortillas and add lettuce and tomatoes down the center.
  5. Spoon crispy chickpeas onto each tortilla and drizzle with tahini or yogurt sauce.
  6. Fold both sides of the tortilla over the filling tightly, cut in half if desired, and serve warm.
