  • 1 cup corn kernels (fresh or frozen)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium Yukon Gold potatoes, diced
  • 1 cup heavy cream
  • 3 cups low-sodium chicken broth
  • 4 slices bacon, diced (optional)
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook diced bacon over medium heat until crispy. Remove excess grease, leaving about 1 tablespoon in the pot.
  2. Add onions to the pot and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add diced potatoes and chicken broth; bring to a simmer for about 15 minutes or until potatoes are tender.
  4. Incorporate washed clams and corn; cook for another 5-7 minutes until clams open.
