  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup dry white wine

Instructions

  1. Prepare all ingredients: chop onions, mince garlic, and slice mushrooms.
  2. In a large skillet over medium heat, melt olive oil and butter. Add onions and garlic; sauté until fragrant and translucent (about 3-4 minutes).
  3. Add sliced mushrooms; cook until softened (5-6 minutes).
  4. Stir in Arborio rice, cooking until slightly translucent (1-2 minutes).
  5. Pour in white wine; let simmer until mostly absorbed.
  6. Gradually add warm vegetable broth one ladle at a time, stirring often until absorbed (approximately 20 minutes).
  7. Mix in green peas and grated Parmesan cheese until creamy.
