Ingredients

  • 4 medium Russet potatoes (about 2 lbs)
  • 4 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 2 tbsp fresh rosemary or thyme, chopped
  • Salt & pepper to taste
  • 1 cup grated cheese (optional; sharp cheddar or parmesan)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the Russet potatoes. Slice them thinly, stopping short of cutting through completely.
  3. Drizzle olive oil over each potato, then season generously with salt and pepper.
  4. Insert garlic slices and fresh herbs between some potato slices.
  5. Place potatoes on a parchment-lined baking sheet and bake for 45-50 minutes until golden brown and fork-tender.
  6. If using cheese, sprinkle it over the top during the last 10 minutes of baking.
