Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 4 cloves fresh garlic, minced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine breadcrumbs with Parmesan cheese, salt, and pepper.
  3. Dredge each chicken breast in the breadcrumb mixture until fully coated.
  4. Heat olive oil in a skillet over medium-high heat; sear the coated chicken for 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until cooked through.
  6. While the chicken bakes, melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant. Pour in cream and simmer until thickened.
