  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • Vegetable oil for frying

Instructions

  1. Cut chicken breasts into bite-sized pieces and pat dry.
  2. In a bowl, mix flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
  3. Beat eggs in another bowl until frothy.
  4. Dip each chicken piece into the egg mixture and then coat with the flour mixture.
  5. Heat vegetable oil in a deep skillet to about 350°F (175°C). Fry coated chicken pieces in batches for 5-7 minutes or until golden brown and cooked through. Drain on paper towels.
