  • 1 lb large shrimp, deveined
  • 8 corn tortillas
  • 2 cups green cabbage, finely shredded
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp honey or agave syrup

Instructions

  1. In a bowl, mix lime juice, cumin, paprika, salt, and pepper. Add shrimp; marinate for 15 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook shrimp until pink and opaque (3-4 minutes per side).
  3. In another bowl, combine cabbage, Greek yogurt or sour cream, lime juice, honey/agave syrup, salt, and pepper; toss to coat.
  4. Warm corn tortillas in a dry skillet until pliable.
  5. Assemble tacos by placing shrimp on tortillas, topping with slaw and avocado slices. Garnish with cilantro.
  6. Serve immediately with lime wedges.
