- 8 corn tortillas
- 2 cups green cabbage, finely shredded
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp cumin
- 1 tsp paprika
- 1/4 cup fresh cilantro, chopped
- 1 avocado, sliced
- 2 tbsp olive oil
- Salt & pepper, to taste
- 1/2 cup Greek yogurt or sour cream
- 1 tbsp honey or agave syrup
Instructions
- In a bowl, mix lime juice, cumin, paprika, salt, and pepper. Add shrimp; marinate for 15 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook shrimp until pink and opaque (3-4 minutes per side).
- In another bowl, combine cabbage, Greek yogurt or sour cream, lime juice, honey/agave syrup, salt, and pepper; toss to coat.
- Warm corn tortillas in a dry skillet until pliable.
- Assemble tacos by placing shrimp on tortillas, topping with slaw and avocado slices. Garnish with cilantro.
- Serve immediately with lime wedges.
