  • 4 salmon fillets (6 oz each)
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced
  • 1 medium red onion, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, salt, and pepper for the marinade.
  3. Place salmon fillets on one side of the baking sheet and brush generously with the marinade. Let sit while preparing vegetables.
  4. On the other side of the baking sheet, arrange broccoli, cherry tomatoes, zucchini, and red onion. Drizzle with olive oil and season with salt and pepper.
  5. Roast for 15–20 minutes until the salmon flakes easily and vegetables are tender.
