Description

Ingredients

  • 1 cup shredded cheddar and Monterey Jack cheese
  • 4 large flour tortillas
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced (mix of colors)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream and salsa for serving

Instructions

  1. Heat a skillet over medium heat. Add chopped onions and bell peppers; sauté until tender.
  2. Add ground beef to the skillet and cook until browned. Stir in cumin and chili powder.
  3. Mix half of the cheese into the beef mixture until melted.
  4. Warm tortillas slightly, then spoon beef mixture down the center, sprinkle with remaining cheese, and roll tightly.
  5. Place rolled burritos on a parchment-lined baking sheet. Bake at 350°F for 15 minutes or until golden brown.
