  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 2 tbsp olive oil
  • 1 cup diced bell peppers
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 2 tsp garlic powder
  • 2 tsp paprika
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken with salt, pepper, garlic powder, and paprika; place on one side of the baking sheet.
  3. In a bowl, toss garbanzo beans with olive oil and seasonings; spread on the other side of the baking sheet.
  4. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F and garbanzos are golden brown.
  5. While baking, prepare veggies by dicing them into bite-sized pieces.
  6. Once cooked, let the chicken rest before slicing. Assemble bowls with chicken slices, crispy garbanzos, fresh veggies, and drizzle with yogurt sauce.
