Description

Ground Beef Enchiladas are a savory delight, featuring tender beef wrapped in warm tortillas, smothered in rich enchilada sauce and gooey cheese—perfect for family dinners or casual gatherings.


Ingredients

  • 1 lb lean ground beef
  • 8 soft flour tortillas
  • 2 cups grated cheddar cheese
  • 1 can enchilada sauce (red or green)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with onions and garlic for about 7-10 minutes.
  3. Stir in cumin and chili powder until well combined.
  4. Spoon the beef mixture into each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in a baking dish.
  5. Pour enchilada sauce over the rolled tortillas and top with remaining cheese.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Serve warm, garnished with sour cream if desired.
