Ingredients

Scale
  • 3 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1/4 cup vegetable oil (for frying)
  • 2 cups cooked rice (white or brown)
  • 1/4 cup tonkatsu sauce
  • 2 tbsp soy sauce
  • 1 tbsp mirin (optional)

Instructions

  1. Prepare your ingredients by washing and slicing the chicken if necessary. Preheat vegetable oil in a deep pan over medium heat.
  2. Set up three bowls: one for flour, one for beaten eggs, and one for panko breadcrumbs. Dredge each chicken breast in flour, dip into eggs, then coat thoroughly with panko.
  3. Fry the breaded chicken in hot oil for 4-5 minutes on each side until golden brown and cooked through.
  4. While the chicken fries, cook rice according to package instructions.
  5. Once the chicken is done, let it rest before slicing into strips. Assemble by placing chicken over rice and drizzling with tonkatsu sauce.
