- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar
- 16 oz cream cheese, softened
- 2 tsp vanilla extract
- 3 large eggs
- 1 cup blueberries (fresh or frozen)
- 1 cup strawberries, sliced
Instructions
- Preheat oven to 325°F (165°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of the dish.
- Beat cream cheese until smooth; add granulated sugar and vanilla extract, mixing well. Incorporate eggs one at a time until just combined.
- Divide the cheesecake mixture in half. Fold half into a bowl with blueberries and the other half with sliced strawberries.
- Layer half of the plain cheesecake batter in the crust, add dollops of blueberry batter, then top with remaining plain batter and dollops of strawberry batter.
- Bake for 35-40 minutes until set around the edges but slightly jiggly in the center. Cool completely before slicing.
