  • 1 lb Italian sausage (sweet or spicy)
  • 3 bell peppers (1 red, 1 yellow, 1 green), sliced
  • 1 large onion, sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the bell peppers and onion into strips.
  3. In a large bowl, toss the sliced vegetables with olive oil, garlic powder, salt, pepper, and Italian herbs until evenly coated.
  4. Place the sausages on top of the seasoned vegetables on a sheet pan.
  5. Roast in the oven for 25-30 minutes or until the sausages are cooked through and the veggies are tender.
  6. Let cool slightly before serving directly from the pan.
