Description

A vibrant, flavorful dish featuring fresh veggies, grilled chicken, and a zesty dressing. Perfect for summer gatherings or as a light meal any time of year!


Ingredients

  • 34 boneless, skinless chicken breasts
  • Crisp romaine or butter lettuce
  • Shredded red cabbage
  • Thinly shredded carrots
  • Fresh cilantro
  • Roasted peanuts
  • Dressing: lime juice, low-sodium soy sauce, fish sauce, honey, chili paste

Instructions

  1. Preheat grill or stovetop pan over medium-high heat. Season chicken with salt and pepper and grill for 6-7 minutes per side until golden brown and fully cooked.
  2. While the chicken cooks, chop lettuce and shred cabbage and carrots.
  3. In a small bowl, whisk together lime juice, soy sauce, fish sauce, honey, and chili paste until well combined.
  4. Let the chicken cool slightly before slicing it into strips. In a large bowl, combine lettuce, cabbage, carrots, cilantro, peanuts, and chicken strips. Drizzle with dressing.
  5. Toss gently until everything is coated in the dressing. Serve immediately or chill briefly before serving.
