- 500g strong white bread flour
- 7g instant yeast
- 100g dark brown sugar
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- ½ tsp salt
- 300ml whole milk
- 50g unsalted butter (melted)
- 2 large eggs (beaten)
- 300g mixed dried fruits (sultanas, raisins, currants)
- 1 tsp baking powder
Instructions
- In a large bowl, combine flour, yeast, sugar, spices, and salt. Mix until well-blended.
- In a separate bowl, warm the milk and melted butter to about 110°F (43°C). Add the beaten eggs.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the dried fruits evenly throughout the dough.
- Knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl covered with a damp cloth; let rise in a warm spot until doubled in size (1-2 hours).
- Preheat oven to 350°F (180°C). Shape dough into a loaf and place in a greased pan. Bake for 30-40 minutes until golden brown.
