Description

This vibrant salad combines the sweet, smoky flavors of charred corn with juicy mango and chewy haloumi, all enveloped in a luscious creamy yoghurt dressing. Perfect for summer gatherings or a refreshing meal prep option, this dish is sure to impress with its stunning colors and harmonious taste.


Ingredients

  • 2 cups fresh corn kernels (approximately 3 ears of corn)
  • 200g haloumi cheese, sliced into thick pieces
  • 1 large ripe mango, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tbsp)
  • ½ cup thick Greek yoghurt
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Shuck the corn and slice the haloumi.
  2. Char the Corn: Heat a grill pan over medium-high heat. Grill corn for about 10 minutes, turning until charred.
  3. Grill Haloumi: Remove corn and grill haloumi slices for 2-3 minutes on each side until golden brown.
  4. Make the Dressing: In a bowl, mix Greek yoghurt, lime juice, olive oil, salt, and pepper until smooth.
  5. Toss Everything Together: In a large bowl, combine charred corn, grilled haloumi, diced mangoes, and cilantro. Drizzle with dressing and toss gently to combine.
  6. Serve Immediately: Transfer to a platter or individual bowls and enjoy fresh!
