- 2 cups fresh corn kernels (approximately 3 ears of corn)
- 200g haloumi cheese, sliced into thick pieces
- 1 large ripe mango, diced
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime (about 2 tbsp)
- ½ cup thick Greek yoghurt
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Shuck the corn and slice the haloumi.
- Char the Corn: Heat a grill pan over medium-high heat. Grill corn for about 10 minutes, turning until charred.
- Grill Haloumi: Remove corn and grill haloumi slices for 2-3 minutes on each side until golden brown.
- Make the Dressing: In a bowl, mix Greek yoghurt, lime juice, olive oil, salt, and pepper until smooth.
- Toss Everything Together: In a large bowl, combine charred corn, grilled haloumi, diced mangoes, and cilantro. Drizzle with dressing and toss gently to combine.
