- 1 (3.4 oz) package instant vanilla pudding mix
- 2 cups whole milk
- 1 cup heavy whipping cream
- ¼ cup powdered sugar (adjust to taste)
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 2 cups sponge cake or ladyfingers
Instructions
- In a mixing bowl, whisk together the vanilla pudding mix and cold milk for about 2 minutes until thickened. Set aside.
- In another bowl, beat the cold heavy whipping cream until soft peaks form. Gradually add powdered sugar while continuing to whip until firm peaks appear.
- In serving cups, layer sponge cake at the bottom, followed by a layer of vanilla pudding, then whipped cream.
- Add a handful of fresh berries on top of the whipped cream layer and repeat the layering process until the cups are full.
- Cover with plastic wrap and refrigerate for at least one hour before serving.
- Just before serving, add an extra dollop of whipped cream and garnish with more fresh berries.
