Ingredients

  • 2 cups fresh ripe mango puree (about 2 medium mangoes)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 4 tablespoons unsalted butter
  • 1 pre-made graham cracker crust (or homemade using 1 cup crushed graham crackers and 1/2 cup melted butter)

Instructions

  1. Preheat the oven to 350°F (175°C). If using a store-bought crust, set aside. For homemade, mix crushed graham crackers with melted butter and press into a tart pan.
  2. Peel, chop, and blend mangoes in a food processor until smooth to obtain about 2 cups of puree.
  3. In a saucepan over medium heat, whisk together mango puree, sugar, eggs, and lemon juice. Stir continuously until thickened (about 5 minutes).
  4. Remove from heat and stir in butter until melted.
  5. Pour the warm curd into your prepared crust; cool at room temperature before refrigerating for at least 3 hours.
  6. Slice chilled tart and serve with whipped cream or fresh fruit.
