- 2 cups fresh ripe mango puree (about 2 medium mangoes)
- 1 cup granulated sugar
- 4 large eggs
- 1/4 cup freshly squeezed lemon juice
- 4 tablespoons unsalted butter
- 1 pre-made graham cracker crust (or homemade using 1 cup crushed graham crackers and 1/2 cup melted butter)
Instructions
- Preheat the oven to 350°F (175°C). If using a store-bought crust, set aside. For homemade, mix crushed graham crackers with melted butter and press into a tart pan.
- Peel, chop, and blend mangoes in a food processor until smooth to obtain about 2 cups of puree.
- In a saucepan over medium heat, whisk together mango puree, sugar, eggs, and lemon juice. Stir continuously until thickened (about 5 minutes).
- Remove from heat and stir in butter until melted.
- Pour the warm curd into your prepared crust; cool at room temperature before refrigerating for at least 3 hours.
- Slice chilled tart and serve with whipped cream or fresh fruit.
