  • 1 pie crust (store-bought or homemade)
  • 4 large eggs
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (any color)
  • 1 medium onion, diced
  • 1 cup cheese (Gruyère or feta), shredded or crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and place a baking sheet inside.
  2. Roll out the pie crust into a 9-inch tart pan and trim excess dough.
  3. In a skillet over medium heat, sauté onions and bell peppers for about 5 minutes until softened.
  4. Add spinach to the skillet and cook until wilted.
  5. In a bowl, whisk together eggs, heavy cream, salt, and pepper until well combined.
  6. Layer sautéed vegetables in the prepared crust, then pour the egg mixture over them.
  7. Top with cheese of choice.
  8. Bake on the hot baking sheet for 35-40 minutes until set in the middle and golden brown on top.
  9. Allow to cool for about 10 minutes before slicing.
