  • 1 cup fresh strawberries, sliced
  • 1 cup full-fat coconut milk
  • 1/2 cup granulated sugar (adjust to taste)
  • 4 cups water

Instructions

  1. Rinse sago pearls under cold water until clear. Boil 4 cups of water in a pot, add sago pearls, and cook for 10-15 minutes until translucent. Stir occasionally. Drain and rinse with cold water.
  2. In another saucepan, combine coconut milk and sugar over low heat until sugar dissolves.
  3. Toss sliced strawberries with 2 tablespoons of sugar in a bowl and let sit to release juices.
  4. Mix cooked sago into the sweetened coconut milk.
  5. In serving bowls, layer the sago mixture with strawberries creatively.
  6. Chill in the refrigerator for at least one hour before serving. Garnish with optional toppings if desired.
