  • 2 large red bell peppers, quartered
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the quartered bell peppers on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Roast for 20-25 minutes until tender.
  3. In a skillet over medium heat, add the remaining olive oil and sauté the minced garlic for about 1 minute until fragrant.
  4. Blend the roasted peppers with sautéed garlic until smooth; stir in lemon juice, salt, and pepper.
  5. In the same skillet, cook the tilapia fillets for about 3-4 minutes per side until golden brown.
