- 300g mixed dried fruit (raisins and currants)
- 1 cup (240ml) strong black tea
- 225g self-raising flour
- 100g brown sugar
- 1 tsp mixed spice or cinnamon
- 2 large eggs
- 75g unsalted butter, softened
- 100ml whole milk
Instructions
- Brew the tea and soak the dried fruit in hot tea for at least an hour.
- Preheat your oven to 160°C (320°F) and prepare a greased loaf tin.
- In a bowl, mix dry ingredients: flour, sugar, and spices.
- In another bowl, beat eggs with butter and milk; combine with dry ingredients gently.
- Fold in soaked fruit and transfer to the prepared loaf tin.
- Bake for about 1 hour or until a skewer comes out clean. Cool before slicing.
