Ingredients

  • 300g mixed dried fruit (raisins and currants)
  • 1 cup (240ml) strong black tea
  • 225g self-raising flour
  • 100g brown sugar
  • 1 tsp mixed spice or cinnamon
  • 2 large eggs
  • 75g unsalted butter, softened
  • 100ml whole milk

Instructions

  1. Brew the tea and soak the dried fruit in hot tea for at least an hour.
  2. Preheat your oven to 160°C (320°F) and prepare a greased loaf tin.
  3. In a bowl, mix dry ingredients: flour, sugar, and spices.
  4. In another bowl, beat eggs with butter and milk; combine with dry ingredients gently.
  5. Fold in soaked fruit and transfer to the prepared loaf tin.
  6. Bake for about 1 hour or until a skewer comes out clean. Cool before slicing.
