  • 3 tbsp harissa paste
  • 2 lemons (juiced)
  • 6 garlic cloves (minced)
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (like cilantro or parsley) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine harissa paste, minced garlic, olive oil, lemon juice, salt, and pepper.
  3. Pat the chicken dry and rub the marinade all over the bird, including inside the cavity. Let it marinate for at least 30 minutes.
  4. Place the chicken in a roasting pan breast-side up and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  5. Remove from the oven and let rest for 10 minutes. Garnish with fresh herbs before serving.
