- 8 oz medium shells or rotini pasta
- 1 lb lean ground beef or turkey
- 1 packet (1 oz) taco seasoning
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, rinsed and drained
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 1/2 cup sour cream
- 2 green onions, sliced for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Boil a pot of salted water and cook the pasta until al dente (about 8-10 minutes). Drain well.
- In a large skillet over medium heat, brown the ground beef or turkey for about 6-8 minutes until no pink remains.
- Stir in taco seasoning, diced tomatoes (with juices), black beans, and cooked pasta until well combined.
- In a greased baking dish, layer half of the pasta mixture, followed by half of the shredded cheese. Repeat layers.
- Bake for 20-25 minutes until bubbly and golden brown.
- Garnish with green onions and dollop sour cream on top before serving.
