  • 1/4 cup low-sodium soy sauce
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 2 cups cooked sushi rice or jasmine rice
  • 1 medium cucumber, thinly sliced
  • 1 ripe avocado, sliced
  • 1 medium carrot, julienned
  • 2 green onions, sliced
  • Optional: Sriracha or chili sauce for heat

Instructions

  1. Prepare the marinade by whisking together soy sauce, sesame oil, minced garlic, and rice vinegar in a bowl.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over them. Marinate for at least 30 minutes in the fridge.
  3. Preheat grill or pan over medium-high heat. Cook chicken for about 6 minutes per side until the internal temperature reaches 165°F (75°C). Let rest before slicing.
  4. Cook rice according to package instructions until fluffy.
  5. Assemble bowls by placing cooked rice at the base and topping with sliced chicken, cucumbers, carrots, avocado slices, and green onions.
  6. Drizzle with remaining marinade or sriracha if desired; garnish with sesame seeds.
