  • 1 lb fresh or frozen shrimp (peeled and deveined)
  • 8 small corn tortillas
  • 1 ripe mango (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. If using frozen shrimp, thaw them in cold water and pat dry.
  2. In a bowl, combine shrimp with olive oil, garlic powder, salt, and pepper; toss to coat.
  3. Sauté the shrimp in a hot skillet over medium-high heat for about 2-3 minutes per side until pink and opaque.
  4. Meanwhile, mix diced mango, red onion, cilantro, and lime juice in a separate bowl to make the salsa.
  5. Warm corn tortillas briefly on the skillet until pliable.
  6. Assemble tacos by filling each tortilla with sautéed shrimp and a generous scoop of mango salsa.
  7. Serve immediately with extra lime juice if desired.
