  • 4 boneless skinless chicken breasts
  • 1 cup white rice
  • 1 cup low-sodium chicken broth
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 roasted poblano peppers, chopped
  • ¼ cup fresh cilantro
  • ¼ cup sour cream or Greek yogurt
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tsp cumin powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Start by washing and drying the chicken breasts. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté the chicken for about 5-7 minutes on each side until golden brown; transfer to a plate.
  3. In the same skillet, add chopped onions, garlic, and roasted poblano peppers, sautéing for about 3-4 minutes until softened.
  4. Stir in rinsed rice and chicken broth. Bring to a boil, then reduce heat and cover for approximately 20 minutes until rice is tender.
  5. Meanwhile, blend cilantro, sour cream or Greek yogurt, lime juice, avocado, cumin powder, salt, and jalapeño (if using) until smooth.
  6. Once the rice is cooked, return the chicken to the skillet and drizzle with green sauce before serving.
