- 1 cup white rice
- 1 cup low-sodium chicken broth
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 roasted poblano peppers, chopped
- ¼ cup fresh cilantro
- ¼ cup sour cream or Greek yogurt
- 1 ripe avocado
- Juice of 1 lime
- 2 tsp cumin powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Start by washing and drying the chicken breasts. Season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sauté the chicken for about 5-7 minutes on each side until golden brown; transfer to a plate.
- In the same skillet, add chopped onions, garlic, and roasted poblano peppers, sautéing for about 3-4 minutes until softened.
- Stir in rinsed rice and chicken broth. Bring to a boil, then reduce heat and cover for approximately 20 minutes until rice is tender.
- Meanwhile, blend cilantro, sour cream or Greek yogurt, lime juice, avocado, cumin powder, salt, and jalapeño (if using) until smooth.
- Once the rice is cooked, return the chicken to the skillet and drizzle with green sauce before serving.
