  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (canned or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (about 4 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the black beans and corn. Halve the cherry tomatoes, dice the red onion, and chop the cilantro.
  2. In a large mixing bowl, combine black beans, sweet corn, cherry tomatoes, red onion, and cilantro. Stir well to mix.
  3. Add lime juice and olive oil to the mixture. Season with salt and pepper; toss gently until coated.
  4. Taste and adjust seasonings if needed.
  5. Cover with plastic wrap or transfer to an airtight container; chill in the fridge for at least one hour to enhance flavors.
