- 1 cup panko breadcrumbs
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh dill, finely chopped
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 2 tbsp extra virgin olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together ground chicken, panko breadcrumbs, minced garlic, parsley, dill, lemon zest, salt, and pepper until just combined.
- Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides (about 8–10 minutes).
- In a separate pot, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente (approximately 8–10 minutes). Drain any excess liquid if necessary.
- Stir in lemon juice and additional zest into the cooked orzo before serving.
