  • 1 cup panko breadcrumbs
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp fresh dill, finely chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup orzo pasta
  • 3 cups low-sodium chicken broth
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground chicken, panko breadcrumbs, minced garlic, parsley, dill, lemon zest, salt, and pepper until just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  4. Heat olive oil in a skillet over medium heat. Add meatballs and cook until browned on all sides (about 8–10 minutes).
  5. In a separate pot, bring chicken broth to a boil and add orzo. Cook according to package instructions until al dente (approximately 8–10 minutes). Drain any excess liquid if necessary.
  6. Stir in lemon juice and additional zest into the cooked orzo before serving.
