  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon.
  2. Add chopped onion and minced garlic; sauté for about 5 minutes until softened and fragrant.
  3. Stir in diced bell peppers and cook for another 5 minutes until they begin to soften.
  4. Pour in the diced tomatoes along with their juices and vegetable broth. Bring to a gentle simmer.
  5. Add rinsed kidney beans and corn; season with chili powder, cumin, and paprika. Stir well and let simmer for about 20 minutes.
