  • 1 cup fresh breadcrumbs
  • 1 large egg (room temperature)
  • 1/4 cup fresh parsley, chopped
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced thinly
  • 2 medium Yukon Gold potatoes, diced
  • 4 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, parsley, egg, garlic powder, salt, and pepper. Mix gently until just combined.
  2. Heat olive oil in a large pot over medium heat. Carefully brown meatballs on all sides for about 5-7 minutes. Remove and set aside.
  3. In the same pot, sauté onions and carrots until onions are translucent (about 3 minutes). Return meatballs to the pot.
  4. Pour in beef broth and diced tomatoes (with juices). Stir well and bring to a gentle simmer.
  5. Add diced potatoes to the pot and simmer uncovered for 30-40 minutes until everything is tender.
  6. Taste and adjust seasoning as needed before serving.
