  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups low-sodium chicken broth
  • 2 cups dumpling mix (or homemade with 1 cup flour, 1 tsp baking powder, 1/2 cup milk, and 2 tbsp melted butter)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Sauté diced onion until soft and translucent.
  2. Add chicken breasts, seasoning with salt and pepper. Cook until browned on both sides.
  3. Pour in chicken broth along with carrots and celery; bring to a simmer.
  4. In a separate bowl, mix flour, baking powder, milk, and melted butter for dumplings. The batter should be thick yet pourable.
  5. Drop spoonfuls of the dumpling batter into the simmering stew. Cover and steam for about 15 minutes until dumplings are fluffy.
  6. Serve hot with fresh herbs sprinkled on top.
