- 2 tbsp olive oil

- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 4 cups low-sodium chicken broth
- 2 cups dumpling mix (or homemade with 1 cup flour, 1 tsp baking powder, 1/2 cup milk, and 2 tbsp melted butter)
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, heat olive oil. Sauté diced onion until soft and translucent.
- Add chicken breasts, seasoning with salt and pepper. Cook until browned on both sides.
- Pour in chicken broth along with carrots and celery; bring to a simmer.
- In a separate bowl, mix flour, baking powder, milk, and melted butter for dumplings. The batter should be thick yet pourable.
- Drop spoonfuls of the dumpling batter into the simmering stew. Cover and steam for about 15 minutes until dumplings are fluffy.
