  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & pepper to taste

Instructions

  1. Rinse lentils under cold water until clear. Prepare carrots, celery, onion, and garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Stir in garlic, carrots, and celery; cook until softened.
  3. Add rinsed lentils and canned tomatoes (with juice) into the pot.
  4. Pour in vegetable broth and season with cumin, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 35 minutes until lentils are tender.
  5. Remove bay leaf before serving. Adjust seasoning if needed and ladle into bowls.
