- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp dried thyme
- 1 bay leaf
- Salt & pepper to taste
Instructions
- Rinse lentils under cold water until clear. Prepare carrots, celery, onion, and garlic.
- In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Stir in garlic, carrots, and celery; cook until softened.
- Add rinsed lentils and canned tomatoes (with juice) into the pot.
- Pour in vegetable broth and season with cumin, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 35 minutes until lentils are tender.
- Remove bay leaf before serving. Adjust seasoning if needed and ladle into bowls.
