  • 3 medium zucchinis, diced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Prepare your ingredients by washing and chopping the zucchini, onion, and garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes).
  3. Add minced garlic, chili powder, and cumin; cook for another minute until fragrant.
  4. Stir in diced zucchini, canned tomatoes (with juice), and drained beans; mix well.
  5. Bring to a gentle boil then reduce heat to low. Simmer for about 20 minutes until flavors meld.
  6. Taste and adjust seasoning as needed before serving hot.
